SIMONA MAVER- Director, Sommelier

Always passionate about food and wine in the world, following the footsteps of her father and with an eye curious and interested, Simona becomes sommelier in 2012 after obtaining a trail at the Italian Sommelier-delegation of Bergamo.
The active collaboration in Lombardy through the association allows her to get a better feeling and practical experience in the field and in 2014 brilliantly follows the title of Official Taster AIS.


After working for several years in the activity family in Bergamo, hometown, decides to boost her career abroad, heading straight on Vino di Vino, where she became director in 'April 2015.

Availability and commitment allow her to further strengthen the team already close-knit.
Friendliness, professionalism and a smile on her face are her business card.

 

MATTEO L'ALTRELLI -Chef

Matteo was born in Foggia in 1975, where he graduated in 1995.

He successfully attended a commis cooking course in Termoli (CB) in 1999, where he improved his professional preparation. After he finished his studies, he started his career working as a chef at the Holiday Hotel in Foggia and then he worked at the Palazzo Sant’Elena Hotel for two years.

He became the manager, still in the quality of chef, at the IL CHIOSTRO restaurant in the Palazzo Sant’Elena Hotel in 2010. He came to Prague in 2011 to increase his professional experience in order to give it a new more international dimension, and he worked as a chef in the restaurant Pepe Nero. At the end he started a new exciting experience in our restaurant as a support of our chef Mario D’Innocenzo with whom he makes a very consistent and harmonious team along with the other Italian colleagues as well.

 

MICHELA ANTONACCI- Pastry Cook and II Chef

Born in Desio in 1989 and graduated in 2008 at the hotel institute C. Porta di Milano, has had two-year work experience in catering, first to Milan and then to Rome.
Her work experience in the area native has more strengthened after the collaboration with the Milanese restaurant Savini where she worked as a pastry chef.


In 2013 entered the team of Vino di Vino as a cook and pastry, with great imagination and skill personally the dessert menu failing to take by the throat even customers from the most demanding palate, with choices sometimes sought other that recall the classic Italian confectionery tradition.

  

PAVEL ZAPLETAL - Sommeliér

Pavel is Czech but speaks perfect Italian; he started his career as a barman working in important Prague based hotels. He has always had a big passion for wines, in particular for the Italian ones, and he moved to Italy in 2005 where he got the diploma as a professional sommelier, after attending various courses in Trento. In the meanwhile he went through some qualifying experiences in well known venues such as the ”D&D” restaurant in Masso Sasso, the “Al Trivio” and the “Nero Cubo” hotel in Rovereto.  After he came back home, he started working in VINOdiVINO, where the huge amount and quality of available Italian and international wines allow him to put all the knowledge and experience that he acquired in practice.

Having a very good dialectical talent and a great personal attitude, Pavel has a very kind and expert attitude with the clients and creates an immediate harmony.

His recommendations are never contrived as he suggests the possible combinations with the chosen dishes, showing the characteristics of the offered wines and after having served the clients, he discretely follows them until the end of the dinner.
